Butternut Squash + Purple Cabbage Curry Soup

Maybe under appreciated vegetable is the cabbage. While at times it may seem it doesn’t have much taste and a bit sad looking, considering it’s sister or cousin the purple (red) cabbage. To me it is more exciting and flavorful then the green (mostly white) cabbage, and I am sure it has more nutritional value too.

Butternut Squash + Purple (Red) Cabbage Curry Soup // Roasted Butternut squash, half purple (red) cabbage, whole onion, 1 carton of vegetable broth, 5 sticks of celery, 3 large carrots, 4 garlic cloves, curry powder, 1 can of coconut milk, salt + pepper, amino acids, turmeric, vegan red miso paste, cooking oil.

After roasting butternut squash, chop it and add it to a big pot with oil and add the sliced cabbage with the diced onions, celery, carrots, and garlic. After onions are soft and semi-transparent add seasoning to taste + the two table spoons of miso paste and stir for 5 min. Nest add the vegetable broth and coconut milk. Simmer in low for about 25-35 min. It gets better the longer you simmer it and re-heat it.

Avocado Toast + Tomato Jam + Roasted Green Beans

When it comes to having a nourishing and exciting dish, having lots of bright and complimentary colors is one great way to the picture perfect plate you’d want to share with all your friends.

In addition, this dish is a great opportunity to use as much NUDGE (Nutritional Yeast) as you desire. Over the avocado, over the tomato jam, even over the green beans. While you don’t ever want to over do it and eat more the a moderate amount, part of cooking is having fun and experimenting with tastes—some combinations work better then others for everyone.

Avocado Toasts// Weaver St. Sourdough bread (zero waste at Co Op), amino acids (o), curry powder (o), salt, olive oil or sesame oil, Nudge.

Slice and grill bread over low head on a skillet with oil, adding curry seasoning to taste. Slice fresh avocado, top toast, sprinkle salt + Nudge, optionally top with sriracha.

Tomato jam// diced tomato, garlic, dash balsamic vinegar, olive oil, salt, optional herbs (basil, rosemary, or thyme)

Sauté tomatoes + garlic with herbs over low heat in the skillet with residual oil used for the grilled bread until tomatoes are soft / desired texture, add a dash of vinegar to taste.

Roasted Green Beans // two handful of organic green beans, sesame oil (or any other kind of cooking oil), salt, pepper, cayenne pepper (optional), ginger.

Preheat oven to 350 degree F. Wash green beans and pull off stems, not necessary to cut off ends or even the stems if you are really tired and hungry. Put in in a pan the dry, or semi dry, green beans and add oil and seasonings. Mix and put in oven for 20-25 min, depending on your desired texture, more time will give you a darker and softer green bean.

Shopping List for two:

  1. Half a loaf of your favorite grilling (toasting) bread

  2. 1-2 avocados

  3. 4-5 fresh tomatoes + fresh herbs like basil, rosemary, or thyme if desired

  4. 1 bag of green beans

  5. 1/4 cup of Nutritional Yeast

    (You may already have the following in your pantry)

  6. Amino acids

  7. olive oil and sesame oil (you can also just use one or whatever you have on hand)

  8. Balsamic vinegar

  9. Curry Powder

  10. Cayenne powder (optionals)

  11. Salt + Pepper

  12. Ginger (fresh or powder)

  13. Garlic (fresh or powder)
